My holidays were lovely, as I spent them with my family, eating lots of delicious food. Since we're Hanukkah not Christmas people, we enjoyed a day at the movies and at my aunt Ida's house, celebrating my uncle Victor's birthday. A great spread of deliciousness surrounded us, as we gorged on typical Jews-getting-together-during-Christmas food such as bagels, lox, other fish spreads, Israeli salad and a generous helping of desserts.
Seeing that dessert is my favorite part of any meal, I decided to make cupcakes in honor of my uncle and the holidays. I called them my celebration cupcakes, hence the festive frosting seen above. You could use the recipe here to make them and for the icing, just use confectioners sugar, a drop of water, food coloring and your favorite toppings such as chocolate chips, marshmallows, dried fruit or nuts.
