Fooditka Family Cooking Competition a la Chopped

This past weekend, my family and I spent a most relaxing time in the Berkshires near Great Barrington.  In honor of my mom's 60th birthday, we rented a lovely house in the area and spent the whole weekend chillin, cooking, enjoy the outdoors and each other's company.

Always the creative force behind something wonderful, my Mom thought it'd be a great idea to take part in a family cooking competition, not unlike Food Network's Chopped.  The object of the game was to work with three pre-selected secret ingredients and make them into a cohesive dish.  Of course the fun of the game is that you never know what you'll get and that the three ingredients don't necessarily go well together.  Here's where we netted out - everything turning out quite well might I add:

Secret Ingredients:
Batch 1 - Oranges, cous-cous/quinoa medley, artichokes
Batch 2 - Porcini mushroom truffle cream, sunflower seeds, pomegranate balsamic vinegar
Batch 3 - Bacon, white truffle oil, Nutella

Dan and I were lucky enough to score the second batch, which made way for great opportunities to make something hearty, comforting but also sophisticated.  I have to say that everyone pulled out the stops and all of the dishes were a huge success.  Even though we tried to be discerning in our judging process, we ended up loving everything and congratulated each other on a job well done.  Here are the goodies that came out of this fantastic competition.  I highly recommend doing this on a future family trip - it'll for sure bring you closer together!

Citrus Salad with Bacon by Mira - Having the great idea of pairing the smoky bacon with something healthy such as fresh vegetables, my mom went all out.  While the dish may look simple, she incorporated a very diabolical strategy of glazing the bacon in Nutella, which surprised and delighted us all.

Nutella Parfait by Paul - Being the master of parfaits, my dad accentuated Nutella as the star ingredient by mixing it with yogurt, fresh fruit and some crunchy oat cereal.  Not only did he put his concoction in festive wine glasses, he cut out the fruit in a zig-zag design, which added a special touch.

Stuffed Peppers with Grilled Oranges by Peter and Fiana - Deciding to make something healthy, each bite of this stuffed pepper with a cous-cous/quinoa medley stuffing tasted wholesome.  We loved all the different colors represented, including a mix of red and yellow peppers.  A side of a sweet plumb reduction was a great idea for a natural sweetener, as well as the clever use of grilled oranges, that would also go nicely on top of a salad.

A Modern take on Chicken and Waffles by Dan and Fooditka - Doing what we do best, Dan and I decided to make waffles.  Using lean chicken sausage as the star ingredient, we sauteed it over some red onions and then topped each homemade sunflower seed waffle with it, as well as a generous amount of the porcini truffle cream.  A big handful of arugula sprinkled with the pomegranate balsamic went on top for more goodness.

Bear's Valiant Effort on Chopped

Tonight was a big night on TV for Astoria, as Chef Natasha Pogrebinsky of Bear Restaurant was yet again featured on Food Network's Chopped.  Making her debut back in August and fighting her way into the final round, Natasha came back tonight in an attempt to seize a second chance at victory.

Watching the program, Dan and I waited with baited breath, as we rooted for Chef Natasha's success.  Unfortunately, while I can't report back a win, Natasha fought til the end for what was a very tight match and held her own next to some fierce competition.

Extremely proud of this talented lady, I wanted to feature her creative eats she constructed on tonight's episode with some pretty obscure ingredients.  Congrats on a great competition, Natasha!  Looking forward to seeing you back in the kitchen.

Course 1 - Celery, prosciutto & lime bisque with crostini

Course 2 - Fried snapper ribs with tartar and pan-roasted snapper filet Course 3 - Deep fried cheesecake with dulce de leche cappuccino

Watch Bear's Chef Natasha on Chopped

In case you haven't yet heard, I wanted to make sure you guys tune into some Astoria culinary goodness on the Food Network tomorrow.  Astoria's very own, Chef Natasha Pogrebinsky from Bear will be featured on the popular Chopped program tomorrow at 10:00 p.m.  I'm so excited to see Chef Natasha competing on the show for many reasons, one being that she's the only female competitor in the episode, the other being that she's really talented and also because she accurately represents the culinary prowess found in Astoria and LIC.

Chef Natasha will be competing with 4 other national acclaimed chefs, all with diverse backgrounds.  For those of you familiar with the show, their given list of ingredients they have to cook with tomorrow include lemon bars, acai juice, upland cress and whelk snails.  Have a go at that guys - can't wait to see what Chef Natasha comes up with.

If you'd like to get a little preview of what's to come tomorrow, take a look at this preview clip.  Tune in tomorrow at 10:00 p.m. on The Food Network.

Foodista's Inside Scoop with Ted Allen

For a lot of you, the man pictured above needs no introduction.  But for others who might not be as familiar with him through TV shows such as Chopped, Top Chef, The Best Thing I Ever Ate, and of course, Queer Eye for the Straight Guy, he's Ted Allen, TV personality, cookbook author, food writer, wine connoisseur and everything else culinary.

I had the opportunity to have breakfast with Ted, along with six other awesome food bloggers, during which he revealed a lot of fun food and entertaining tips.  The breakfast was sponsored by Cascade, (for which Ted is a spokesperson of) in honor of their Best Food Mergers

promotion, where participants get to vote for their most popular food pairings that are the hardest to clean.  You can vote here and get Ted's personal recipes for popular and delicious, but also hard-to-clean foods such as spaghetti and meatballs, mac and cheese, and fried chicken and gravy.

But back to our breakfast with Ted.  We each got to ask him a couple of questions and the setting was pretty intimate and personal, which we all appreciated.  It was great to see what a genuine person Ted is, and his answers really came from the heart--you can see his passion for food and entertaining just pouring out of him.

Here are a couple of video clips from our breakfast that I think you'll enjoy.  Some of the topics he touches on include:

As you'll notice, Ted is a proud Brooklynite and a lot of his answers give insight into his hood.  I definitely related with him about appreciating his local nabe and its wonderful and underrated finds.
